Weekday breakfasts are pretty much always on the run, but on weekends I like to treat myself. Sometimes I reach for mocha (see my recipe), but sometimes pancakes are the go.
When I was a vegetarian, I used to stick to a recipe I once overheard Jamie Oliver tell someone on the TV (1 cup flour, 1 cup milk, 1 egg), but now that I’m a vegan, 2 out of those 3 ingredients are not in my repertoire. I didn’t really want to go along the soy milk instead of milk, flax instead of egg route, so I hunted around the internet and read about 20 different vegan and non-vegan recipes to see what people were doing. And it is easy. And it tastes just the same (IMO)!
Now, lately I’ve been trying to stick to a low gluten diet. I seem to be able to tolerate a small amount, which makes going out easier, but altogether I’d rather cut it out. I tried to convert this recipe with coconut flour, but I learnt a valuable lesson. Coconut flour is waaayyy different to normal flour. So, at some point I’ll experiment with different flours (I’m leaning toward buckwheat flour), but for the moment, I’m just stoked I’ve got this easy peasy pikelet recipe for a treat.
- 1 cup whole wheat flour
- 1 cup soda water
- 1 teaspoon coconut sugar
- ½ teaspoon lemon juice
- ½ teaspoon bicarb soda
- Mix it all together in a pouring jug and then pour little circles into a lightly greased frypan. Turn them over when they get heaps of bubbles at the top.
